Pose estimation for badminton + boxing

• Adds a ROS2 pose estimation node using RTMPose-s that subscribes to camera images and publishes 17 COCO body keypoints as a PoseArray topic.
• Built and launched in Docker. Verified /perception/pose_estimation echoes 17 keypoints per frame.

TODO:

• Need to test on realsense camera to verify it works on real hardware
